01 - Heat a grill pan or skillet over medium-high heat.

07 - Divide the dressed cucumber salad onto serving plates and top with the sliced grilled chicken.
08 - Sprinkle the salad with toasted sesame seeds and chopped fresh cilantro if desired. Serve immediately.

# Expert Advice:

01 -
  • It actually tastes indulgent despite being genuinely good for you, which is rare and worth celebrating.
  • The whole thing comes together faster than you'd think, making it perfect for when you want something fresh but don't want to spend your evening cooking.
  • That sesame dressing is genuinely addictive and transforms what could be boring salad into something you'll crave.
02 -
  • Overcooking the chicken by even two minutes makes it dry and ruins the whole dish, so use a thermometer and trust it more than your instincts at first.
  • Spiralizing the cucumbers too far ahead releases water that will turn your salad into soup by the time you eat it.
  • The sesame oil needs to be toasted; raw sesame oil tastes thin and pointless by comparison.
03 -
  • Toast your own sesame seeds in a dry pan for two minutes before serving; the difference in flavor is the difference between good and memorable.
  • Mince your garlic as fine as you can manage so it distributes evenly through the dressing instead of getting stuck in odd chunks.
